Vegan Edamame Dip

Invited to a March Madness party? Need something to bring but you don’t want to break the calorie bank. Pardon the pun but this flavorful edamame dip with veggies is a slam dunk!

White Bean hummus is my go to dip for parties but occasionally I like to change it up with this calorie friendly edamame dip.

Eating healthy doesn’t have to be boring or difficult. People are intrigued by the color and expect spinach. When they taste the mild flavor of the edamame combined with the robust spices, it’s gone in no time.

Edamame isn’t just for dips. It’s one of my favorite go-to vegetables. There is always a bag in the freezer, a few minutes in the microwave, a little sea salt and it’s a great addition to a meal or a salty but healthy alternative to snacking on chips.

Edamame Dip

1/2 lb frozen shelled edamame, about 1 1/2 cups
1/4 C Tahini
1/4 C Water
Juice of 1 lemon, about 3 TBSP
1/2 tsp freshly grated lemon zest
1 clove garlic, minced
1/4 tsp salt, kosher or sea salt is best
1/2 tsp ground cumin
1/4 tsp ground coriander
3 TBSP extra virgin olive oil
1 TBSP chopped flat leaf parsley

Boil the beans in salted water for 4-5 minutes or microwave covered for 2-3 minutes. They should be somewhat soft.

Add all ingredients, except olive oil,  to a food processor, edamame, tahini, water, lemon juice, zest, garlic, salt, cumin and coriander. Using the slow setting puree the mixture drizzling in the olive oil until it is absorbed.

Garnish with a little olive oil drizzle and parsley.

If you want to keep the calories down, serve with fresh veggies, carrots, celery and snow peas. Pita bread or crackers are great dipping alternatives but add more calories than the fresh veggies.
