Easy Vinaigrette

vinaigretteHave you ever read the label on a bottle of commercial salad dressing? If you have you might have noticed the fat and calorie content. If you made it past that to the ingredient list there were probably several words you had a hard time pronouncing. Throw in high fructose corn syrup and sugar and quite possibly this is one of the worst foods sold in the grocery store.

The labels on dressing startled me but when I stopped to think about how long they lasted in the frig I wasn’t surprise. There are several different dressings that you can whip up in 10 minutes or less and this easy vinaigrette is one of my favorites!

Quick and Easy Vinaigrette

4 small shallots

5 TBSP water

2 TBSP Dijon Mustard

2 TBSP Red Wine Vinegar

2 TBSP Lemon Juice

1 1/2 TBSP fresh flat leaf parsley finely chopped

2 TBSP extra virgin olive oil

Salt and Pepper to taste

Chop 2 of the shallots. Place in a microwavable bowl with water, cover tightly and microwave for approximately 5 minutes until the shallots are tender.

Poor the shallots and water into a blender. Add the mustard, vinegar and lemon juice. Blend until the mixture is smooth then pour into a bowl.

Finely chop the other 2 shallots add to to mixture. Add parsley, olive oil, salt and pepper. Gently whisk the mixture.

This can be stored for up to 2 weeks in the frig. I like to bring it to room temperature before serving. This yields about 3/4 cup and about 6 servings. Each serving has has approximately 4g of fat, 4g carbs and 64 calories.

Fresh herbs create the best flavor but if you don’t have them don’t sweat. I keep a bottle of Penzey’s Dried Shallots in my cabinet. About 1/2 tsp dry shallots are equivalent to one clove fresh. Same goes for the flat leaf parsley.
