Mouthwatering Portobello Avocado Chimichurri Burger

Healthy Vegetarian Portobello Mushroom Burger

My sister Kris is in town, with all of the skiing and festivities, I was looking for a healthy flavorful meal long on flavor but short on cooking time.

Portobello avocado chimichurri is a great mouthwatering substitute for a burger with a healthy and slightly spicy topping.

You can marinate the mushrooms and make the chimichurri ahead of time. Cook the mushrooms on the stove, or my favorite method is the grill, giving them a rich, smoky flavor. Overcooked mushrooms get chewy, and it only takes 2-3 minutes on each side for the perfect texture. Baked sweet potato fries in the oven instead of the deep fryer to save calories and make this dish complete.

Portobello Avocado Chimichurri

3-4 portobello mushrooms stemmed and cleaned


1/3 cup olive oil
1/3 cup balsamic vinegar
1/2 tsp cumin
1/2 tsp paprika
3 cloves of garlic chopped
1/2 tsp black pepper
1/2 tsp Salt

Wisk all ingredients together. Scoring the top of the mushroom helps them absorb the marinate. On the cap side cut a few small lines just barely penetrating the surface of the mushroom. Put them in a shallow baking dish or a large freezer bag. Cover with the marinate for at least 3-5 minutes per side. I sometimes let them sit in the frig for the afternoon.


1 cup Italian Parsley, finely chopped
1/2 cup cilantro, finely chopped
3 cloves garlic, minced
1 small or 1/2 large shallot finely chopped
1/2 tsp red pepper flakes
3-4 TBSP olive oil
3 TBSP Lemon Juice
1 medium ripe avocado, cut into small chunks

Mix all ingredients except avocado. Once everything is blended gently stir in the avocado.

Cook the portobellos over medium heat 2-3 minutes on each side. Place on a hamburger bun and fill the cup with the chimichurri. You can add fresh lettuce and tomato

Some people like to use a food processor for the chimichurri but stirring it make the sauce a little more chunky than the food processor.
