Special Ingredient Pico de Gallo Salsa

Pico de Gallo doesn’t have to be reserved for chips. It gives scrambled eggs a zip or turns a baked potato into a healthier flavorful meal.

This pico de gallo recipe is prepared with a secret ingredient that makes it flavorful and spicy, cactus.

Each Cinco de Mayo the grounds crew at the golf course I managed used to treat the rest of the staff to an authentic Mexican luncheon, grilled carne asada accompanied by homemade pico de gallo and chips. Prior to this, I thought of salsa the spicy store boughten variety and avoided it.

This changed my mind! The cilantro cools the hot peppers and the flavorful tomatoes burst in your mouth. Try heirloom tomatoes for a special treat.

Organic Pico de Gallo

2 white onions chopped
3 serrano peppers finely diced
8 large house tomatoes diced
1/4 bunch cilantro leaves finely chopped
1 fresh lime squeezed
12 oz jar drained Nopalito cactus chopped
salt and pepper to taste
3 avocados diced

Place all ingredients in a mixing bowl except avocados. Once mixed top off with avocados.

The cactus gives the pico de gallo additional flavor as well as a little extra spice.

Serrano peppers are hotter than jalapenos so adjust the recipe according to the amount of heat you like in your salsa
