Banana Protein Pancakes

vegan banana protein pancakesOne of the treats of childhood vacations was having breakfast at IHOP. So many flavors to choose from, it felt like I spent hours staring at the menu. My head snapped sideways as I followed the server from table to table wondering what delicious pancaked was on that plate!

I stayed away from pancakes for a long time, too many carbs and not enough protein to start the day. All that changed a few years ago with this recipe for Banana Protein Pancakes.

They are hearty and filling and best of all tasty! I add some tempeh bacon and a little fresh fruit for a complete, well-rounded meal.

Banana Protein Pancakes

  • 1 large banana, mashed
  • 1 tsp vanilla extract
  • 1 cup non-dairy milk
  • 3/4 cup gluten-free all-purpose flour-Bob’s Red Mill
  • 2 serving NuSkin Protein Boost
  • 1/4 cup chopped walnuts or pecans
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp cinnamon

Whisk together milk, mashed banana, and vanilla extract. Set aside.

In a separate bowl, mix remaining dry ingredients.

Incorporate the dry ingredients into the wet, mix until just combined. If the batter is too thick add more milk.

Use nonstick spray on griddle or pan. Heat a griddle to 350 or pan to medium.

Add a quarter cup of the batter into the pan. Flip once bubbles have formed and popped about 2-3 minutes per side.

You can add nuts on top, a little coconut or some fresh sliced bananas. I was a spoiled child,  my dad tapped maple trees and made syrup. I put real maple syrup in a bottle with a cinnamon stick. The sweet maple flavor and the hint of cinnamon bring out the flavor in the pancakes.
